Kitchiri an excellent dish for when we are sick …
When we are sick, traditionally in Portugal we have the habit of eating chicken soup. But what about vegetarians and vegans?
Kitchiri is a great dish for when we feel sick as it is easy to digest and at the same time complete.
You can start by doing the simplest way:
5 cups – water
1 cup rice
½ cup – broken mung beans (shelled or unshelled)
½ tsp – Indian saffron
q.s. – salt
q.s. – ghee, coconut oil, olive oil (depending on taste)
q.s. – fresh parsley and cilantro
Note:
The fat you use and the fresh parsley and coriander put only at the end.
You can also add other spices such as asafoetida, mustard seeds, fenugreek, ground cumin, coriander and cumin powder, spicy.
For those who prefer a richer dish, add seasonal vegetables such as onions, garlic, tomatoes, potatoes, carrots. In Fall and Winter: Turnip, Turnip, Watercress, Cauliflower. In summer and spring: green beans, tomatoes, peppers, courgette, aubergine, leek.
This complete meal takes 30 to 40 minutes to complete.
If you prefer more soup, just add more water, or vice versa.
